Ingredients:
1 cup Grated potato
1 cup Grated vegetables (carrots, turnips, beets, parsnip, peppers, zucchini, greens, etc.)
1/4 cup Diced onion
1/4 cup All purpose flour
1 egg
1/2 tsp salt
1/2 tsp baking powder
1/8 tsp. pepper
optional seasoning: chopped fresh herbs, minced Jalapeno, shredded sharp Cheddar cheese, Smoked paprika & chili powder, etc.
3 Tbsp oil
Method:
Combine all ingredients except oil into batter. Heat oil in a medium skillet.
Spoon batter into hot oil into 3" rounds & press flat. Cook 3 minutes each size, until slightly browned & crispy on outside.
Place on tray in warm oven until all batter is used. Serve with a topping of your choice:
Toppings: ketchup, sour cream, fresh salsa, Sriracha mayo, etc.
