Parmesan Roasted Carrots

2 Versions of this delicious twist on roasted carrots that the whole family will love!

Garlic-Parmesan-Panko or Spicy Garlic Parmesan


Ingredients

  • 1.5-2 pounds carrots, scrubbed well

  • 1/4 olive oil

  • 2 cloves garlic large, minced

  • ¼ cup parmesan cheese, freshly grated

  • 1 pinch salt to taste

  • 1 pinch pepper to taste

  • 1 tablespoon fresh parsley, chopped


Option 1: Add 2 tbsp. Panko breadcrumbs

Option 2: Add 2 tsp. smoked paprika, 1 tsp. cumin powder & ½ teaspoon chili powder or red pepper flakes (more or less depending how spicy you like it)

 

Instructions

  • Preheat oven to 400°F. Lightly grease baking sheet or line it with parchment paper.

  • Cut large carrots in halves the long way, and then in half again. Cut smaller carrots in half only once, trying to get all carrots about the same thickness for roasting.

  • In a large bowl, toss carrots with olive oil, garlic, parmesan, salt and pepper, and either panko breadcrumbs or spices, or go crazy & do both!

  • Mix all ingredients together to completely coat the carrots.

  • Spread out in single layer on baking sheet and bake for 20-25 minutes or until tender. Toss with a spatula half way through.

  • Remove from oven and serve immediately. Top with fresh parsley if desired.
