This is our family's favorite tomato soup!
Ingredients:
1 jar Good Farm Tomato Puree
1 pint broth, chicken or veggie
1 medium onion, finely chopped
1-2 cloves garlic, minced
1-2 stalks celery, finely chopped
1 large or 2 medium carrots, finely chopped
sea salt & freshly ground black pepper
dried herbs -basil & oregano or frozen basil/pesto
olive oil
Method:
Pour a few tbsp of good olive oil in soup pot. Over medium low heat, add onion & saute for a few minutes, until translucent. Add garlic and saute 1-2 minutes more, until fragrant. Add chopped celery & carrot & saute 1-2 minutes more. Add broth and cook over medium-high heat until veggies are tender, about 10 minutes. Add tomato puree, and dried/frozen herbs. Add 1-2 tsp. sea salt & several grinds of black pepper.
Puree soup with immersion blender.
Taste & adjust seasonings.
Serve with fun toppings - crackers, croutons, sour cream, avocado, etc. and/or good grilled cheese sandwiches on sourdough bread.
