Garlic ginger bok choy

2-3 heads bok choy, stems separated and washed well

1-2 cloves garlic, minced

1-2 Tbsp. peanut or sunflower oil

1-2 tsp. fresh ginger, grated or minced

soy sauce to taste

Other seasonings: toasted sesame oil, sriracha sauce, toasted sesame seeds, etc.

Separate bok choy leaves and wash thoroughly.

Chop stems and leaves separately, keeping stems in one pile and leaves in another.

Heat oil in saucepan over medium high heat. Add garlic and ginger and swirl for 1-2 minutes. Add bok choy stems and cook, stirring constantly, for a few minutes, until they soften a bit. Add leaves and cook for another few minutes, until leaves are wilted. Add soy sauce and any desired seasonings to taste and enjoy. We love it with a splash of toasted sesame oil & sriracha sauce.

PRO TIP: Cook quickly over med. high heat to retain crunch!
