Zucchini -Tomato Casserole

 My mom used to make this simple zucchini "recipe" as I was growing up. It's a great light meal and can be tweaked to a ton of different tastes. We sometimes called it zuchini lasagna -- but it's really not a lasagna by any means.
 
In it's simplest form: chop zuchini into chunks. add a can (or less for a small batch) of diced tomatoes, season with a little salt, oregano, basil.
 
Bake (or microwave) until zuchini is tender, Add mozzarella cheese, heat long enough to melt the cheese and enjoy!
From there you can add crumbled bacon, grilled chicken pieces.  My ten year old daughter loves it.
