Turnip Greens N’ Ham

 

½ pound chopped ham (or substitute bacon or spicy sausage)*

1 small onion, diced

2 c. chopped tomatoes OR

            1 large red pepper, chopped

1 lb. turnip greens, rinsed and chopped

2 T. apple cider vinegar

1 tsp. butter

 

Melt butter in a large skillet over medium heat. Add onion and ham. Cook until onion is clear. Add tomatoes or peppers. Add chopped greens and put a lid on skillet. Once pan starts to steam, reduce heat to low and cook until greens are wilted and bright green. Toss with cider vinegar and serve.

Serves 4 as a side dish or 2 as a meal.

 

For a vegetarian version, substitute tempeh bacon or smoked tofu for the ham.
