Maple-glazed Parsnips

1 lb parsnips, sliced in rounds

2 T. butter

1/8 cup maple syrup

pinch of salt


Melt butter in cast-iron pan over medium heat. Add parsnips and cook, stirring occasionally until tender, about 15 minutes. Add maple syrup and pinch of salt. Stir until well-coated. Serve immediately!

Serves 2-3. Double to serve 4-6.
