Creamy Cucumber Salad


  • 2 cucumbers thinly sliced (approx 5 cups)
  • 2 tablespoons minced fresh parsley or dill
  • 2 green onions thinly sliced
  • 1 cup plain Greek-style yogurt or sour cream
  • 1 teaspoon sugar or honey
  • ¾ teaspoon salt
  •  Dash of pepper
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice


  1. Place cucumbers, parsley, and green onions in a serving bowl.
  2. In a separate bowl, whisk together yogurt or sour cream, sugar, celery salt, pepper, vinegar, and lemon juice until smooth.
  3. Pour dressing over the cucumber mixture and toss to coat. Season with salt and pepper, to taste. Garnish with additional parsley, if desired.
  4. Cover and chill until ready to serve.
