Butternut Squash Soup with Apple & Sage
Ingredients
1 large or 2 small butternut squash
2 medium apples, cored, peeled & chopped
1 large onion, diced
4 cups chicken or veg. broth
2 tbsp. butter or olive oil
6-8 fresh sage leaves, finely chopped or 1 tsp. dried sage

Fresh Spinach Sauteed with Garlic & Lemon
Gently sauteed spinach with garlic & lemon makes a delicious & easy side dish. The key is to watch it closely - it cooks very quickly, in just a few minutes!  
Spaghetti with Arugula Carbonara

2 T olive oil
1 large onion, thinly sliced
3 garlic cloves or 3-6 garlic scapes, thinly sliced

I love the combination of summer and fall veggies in this dish. I think roasted veggies is one of the easiest and most delicious ways to enjoy the vegetables in the share! It is open to endless combinations, and roasting always brings out the flavor.
